Fingerling potato pizza with ricotta, goat cheese, and bacon

Tonight Timmy and I made fingerling potato pizza with ricotta, goat cheese, and bacon. The final beauty:

Here is what the pizza was made of (listed in order it was assembled):
  • Premade crust
  • Chopped yellow onion, green onions, and garlic sauteed in olive oil
  • Mozzarella cheese
  • Slices of boiled fingerling potatoes
  • Sprinkling of rosemary, thyme, and parsley (dried spices)
  • Ricotta and goat cheese 
  • Bacon crumbles


The next time we make it, we would like to use 1/3 to 1/2 less ricotta, and a bit more goat cheese. We are also planning on doing a loaded baked potato variation in the future.
