Over the weekend I made this baked potato soup from Mama Loves Food. It was ah-maz-ing. I used light cream cheese so that it wouldn't be quite as fattening, and I didn't notice any flavor lacking.
After we had ate some, my boyfriend suggested we add the Light Velveeta roux that we had leftover from making baked mac and cheese so it wouldn't go to waste. Just when I thought the soup couldn't get any better, BAM, it did.
